The next day I got out early and signed up for a cooking class for that evening. In it I met the first American I had met the entire trip. He was teaching in China.

The class was easy, and lots of fun. The instructors were knowledgeable as well as entertaining. We were taken to the food market and given a tour of all the ingredients we would be using. Then back to the outdoor kitchen to cook up 6 courses. This was probably the best meal I had in Thailand, not in the least because I cooked it myself.

If you don't use fish sauce, and at least 6 chilli peppers, it's not Thai food!

If you can't read my little apron it's the Chiang Mai Cookery School. Sign up at the tiny office near the Top North Hotel. The class is held at a nice restaurant called The Wok (44 Ratmankha Rd, 053-208287). We were told the recipes we used in class are what they use in the restaurant. And if they cook anything like I do, then the restaurant is excellent! That same road has some other western type restaurants that looked inviting.
